Providing you with healthy options is something your dining team does proudly every day. We help you select delicious, nutritious, and satisfying meals, snacks, and desserts by highlighting well-balanced menu choices and providing nutritional information and tips to help you make choices that fit your needs.
Our Campus Dietitian, Amanda Ceglarz is available for complimentary consultations on topics such as:
- Food allergies, celiac disease, diabetes, or other special dietary needs
- Eating healthy on campus

Mindful
Creating a balanced college experience helps develop habits that will continue through post-grad life. Mindful is Sodexo's health and wellness dining initiative to help you make healthy choices by offering manageable wellness tips, campus events, nutrition education and delicious recipes to help students maintain their overall health while they are with us at Fisk University. Mindful offerings served in Spence Food Hall meet stringent nutrition criteria based on the United States Dietary Guidelines for Americans. Each meal part is limited in calories, has fewer than 30% of calories as fat, fewer than 10% of calories as saturated fat, and is restricted in sodium, and cholesterol. Chefs in our test kitchen develop recipes to meet these criteria in a delicious fashion that helps you make healthy choices second nature.

Food Allergies
We take pride in sourcing wholesome ingredients, preparing recipes accurately and providing nutritional analysis and ingredient statements through our online menus and nutrition calculator. We are all passionate about serving students. From general managers to front line servers, we work diligently to address students’ specific needs, especially those with food allergies, Celiac disease, or special diet needs. Fisk University Dining Services does not have allergen-free kitchens or allergen-free dining locations, we take every precaution to ensure cross-contact doesn’t occur. The following products, among others, are used in meal preparation: milk, eggs, peanuts, sesame, soy, tree nuts, fish, shellfish, wheat and products containing gluten.
While we make every effort to identify nutrition data and allergen information, we can’t assure against manufacturer and product formulation variation. It’s the responsibility of the customer with food allergies or other specified nutritional concerns to make the final judgment on whether or not to question the ingredients of a food item or to choose to eat the foods selected.
A team approach led by you, our educated consumer, is the best preparation for a safe school year free of allergic reactions. We want to meet one-on-one with all our customers who have individual dining needs to ensure that your dining experience is safe, delicious, and social. Students who have dietary or allergy-related questions or concerns about any item offered by Fisk University Dining Services should approach a Dining Room Manager or visit the Fisk University Dining Services Office. Students requesting a meal plan accommodation based on a medical need must register with the Academic Excellence and Student Performance (AESP) Office. AESP works collaboratively with the campus dietitian to meet the needs of our students. Please follow the instructions on the Fisk University website to start the process.
Vegetarian
Menu items with the vegetarian icon contain no meat, fish or poultry, or any meat products such as soup base. Our vegetarian offerings meet the needs of lacto-ovo vegetarians and may include eggs and/or dairy products.
Vegan
Vegan offerings contain no meat, fish, eggs, milk or other animal-derived products such as honey.
